Alligator Soul in Savannah Georgia, is not the first attempt by co owners, Hilary and Maureen Craig to win guests over with their love of extraordinary Southern Cuisine. This husband and wife team opened their first Alligator Soul Restaurant located in Everett Washington, just thirty minutes North of Seattle, in June of 1995. That restaurant was quickly voted “The Best Restaurant Outside Seattle”, in Puget Sound by Seattle Magazine, and has consistently been on the “Best Places to Eat in the Northwest” and a top rated restaurant by Zagats for years. Their second Alligator Soul opened in May of 1997 In the Greenlake area of Seattle. This restaurant was no different in quality from the first. Although the menu differed, it also was immediately noticed by the food critics as “One of The Top Ten Restaurants” by both the Seattle Times and the Seattle Post Intelligencer in 1997 seven months after opening. That restaurant was sold before the Craigs moved to Savannah in April of 2001. While Christopher DiNello is now the Executive Chef, and carries on the traditions of Chef Hilary Craig where “everything” is made on the premises, a rarity by all but the most discriminating establishments, Maureen Craig oversees the front of the house and all corporate matters for Alligator Soul. So that’s the long and the short of it! Please come visit Maureen and Chef DiNello any night. They are the ones greeting their guests and making sure they have a dining experience worth remembering!! The Meaning Behind the Name We’re frequently asked, “Why did you choose to name your restaurant Alligator Soul?” The word “Soul” is meant to represent your integrity,and values. Who you are and what you personally stand for. The “Alligator” is meant to represent your outward appearance.
